South Dakota State University (SDSU) and New Mexico State University (NMSU) produced this project as part of the Higher Education Challenge Grant “Recruitment and Retention of a Diverse Population of Food Safety Students Using Market Research for Enhanced Programs.” North Dakota State University served as the lead institution for the overall project contracting with SDSU developing a hands-on laboratory component and NMSU leading the digital creation of classroom media, animations and interactive educational technologies.
